The wine list
Our philosophy is to focus on terroir and vintage wines, so I'm going to talk to you about the importance of yeast.
Yeasts are microscopic fungi that play an indispensable role in the wine fermentation process. There are two ways of making wine, one using exogenous yeasts and the other using indigenous yeasts.
EXOGENOUS YEASTS
These are artificial yeasts, developed by man in the laboratory. They are added to the fermentation process because the yeasts naturally present on the grape skins have either been destroyed by chemical products used in the vineyards (pesticides, weedkillers, etc.) or by the winegrower, who may work his vines organically but has no control over native yeast fermentation. While this practice is permitted, it runs counter to respect for the terroir and the vintage.
INDIGENOUS YEASTS
These are natural yeasts found on the skin of the grape, and can also be found in the cellar. Healthy, chemical-free farming is needed to preserve them. This type of winemaking is called "spontaneous" and is a delicate process. These yeasts can be good or bad, depending on how the winemaker handles them.
